| Serves six
- 3 bananas (ripe but firm)
- 1 baked pie crust
- 2 tbsp butter
- 1/4 cup brown sugar
- 1/4 cup dark rum
- 1/4 cup kahlua
- 1 pint whipping cream
Procedure
Peel and cut banana into coin shaped pieces about 1/4" thick.
Heat skillet. Add butter. When butter melts, add the brown sugar. Stir until
brown sugar and butter bubbles. Add bananas and gently toss in sugar and butter
mixture for about 1-2 minutes. Do not over cook. Add 1/4 cup of dark rum, saute
for an additional minute to burn off alcohol and allow mixture to become like
a syrup. Set aside to cool.
Using your egg beater or food processor, beat whipping cream until firm, it
should form soft peaks. Fold the kahlua into the whipped cream. Add cooled banana
mixture to a cool baked pie crust. Top with the kahlua whipped cream. Garnish
with banana pieces or crushed roasted macadamia nuts ...or both! Refrigerate
until ready to serve.
