Serves three to four

Seasoning Rub for Fish

  • hot peppers (finely chopped) or 1 tsp of chili flakes (amount to taste)
  • 2 tbsp. vegetable oil
  • 2-3 cloves of garlic (minced)
  • 1 tbsp of fresh ginger (minced)
  • 1 lime (zest only)

Procedure

Combine ingredients for rub in a bowl. It is now ready to be applied to the fish.

  • 1 whole rock cod (or other fish)
  • 1 banana leaf or aluminum foil
  • fresh chopped cilantro (optional)

Procedure

The fish should be descaled and clean with the skin on. Score your fish with a knife. Not too deep, but enough to allow your rub to penetrate the fish. Apply the rub both inside and outside the fish. Let the prepared fish sit for 20 to 30 minutes. This will allow the fish to absorb the flavors of the rub.

Wrap the fish in a banana leaf securing the leaf with metal skewers. You can use wooden skewers, soak your wooden skewers in water beforehand to avoid burning them. Aluminum foil can be used in place of a banana leaf for grilling the fish. Use oven mitts or tongs to turn the fish. Metal skewers will become hot on the grill. Grill the fish 7-10 minutes per side or until done. Cooking times may vary due to grill temperature and fish size.

You can sprinkle your grilled fish with a little fresh chopped cilantro or fresh squeezed lime juice. Serve with salad, fresh grilled vegetables or whatever you prefer.
