BEER BATTERED PRAWNS WITH CHILI AIOLI

Serves 6-8

 

  • 2 lbs medium - large prawns (30-40)
  • 8 oz. beer
  • 4 oz flour
  • 2 eggs
  • 1 tbsp melted butter
  • 1 cup real mayonnaise
  • 2 tbsp chili sauce
  • fresh chilies (optional)
  • salt
  • lemon

Chili Aioli

Combine mayonnaise and chili sauce. Add fresh chilies for extra heat and texture.

Procedure

Clean prawns by cutting down the back and removing the vein (or just buy cleaned prawns). Rinse prawns and pat dry with paper towel.

Separate egg yolks from whites and put in separate dishes. Add flour, egg yolks, butter and beer together, mix well and refrigerate for an hour.

When you are ready to cook the prawns. Beat the 2 egg whites stiff until peaks form. Fold this into the batter and use immediately. Dip prawns into batter and deep fry 350-375 F for 3 to 4 minutes. Remove and season with salt. Serve with lemon wedges and chili aioli.
