BEEF & TOMATO FRIED RICE

Ingredients

    Beef & Tomatoes

  • 1 lb beef flank steak
  • 4 tomatoes
  • cornstarch to sprinkle on steak
  • 1/2 cup cooking wine
  • salt and pepper
  • Rice

  • 6 cups long grain rice (cooked)
  • 2 eggs
  • 1 small carrot
  • 1/2 cup peas
  • 1 tbsp oil
  • soya sauce (to taste)
  • Sauce

  • 1 onion (chopped)
  • 2 cloves garlic (minced)
  • 1 tsp grated fresh ginger
  • 1 cup water (more if you would like more sauce)
  • 2 tbsp ketchup
  • 1 tbsp cornstarch
  • 1 tbsp oyster sauce
  • 1 tbsp sugar
  • 1 tsp soya sauce
  • 2 tbsp oil

Procedure

Cut your flank steak (or other favorite steak) into 1-2" slices across the grain. Dust the steak with a little cornstarch. Place into a bowl and marinate with wine, salt and pepper for about 1 hour.

Blanch your tomatoes in boiling water for about 1 - 2 minutes until the skin is easily removed. A gentle rubbing motion with your fingers is all it should take for the skin to come off. If it doesn't come off easily, place them back in the boiling water for another minute or so. Once you have removed the skin, cut the tomatoes into chunks.

Place 1 tbsp oil into heated wok. Slightly beat eggs and add to wok. Stir in a circular motion until they are about half cooked, then add the cooked rice and soya to taste and stir fry for another 3 minutes until the rice is fully heated through. Next you will add your peas and grated carrots (or other vegetables of your choice) for color. Stir fry for a few more minutes. Place on a platter and set to the side.

Add 2 tbsp oil to your wok on high heat, add the marinated beef and stir fry for 2 minutes. Then add the garlic, ginger, onion and tomatoes, sitr fry for another 30 seconds. Now it is time to add the liquids: water, soya sauce, oyster sauce and ketchup. Season with sugar, salt and pepper. When the tomatoes are cooked, mix the cornstarch with equal amounts of cold water, then slowly add the mixture to your wok and keep stirring. The mixture will thicken and will have a nice glossy sheen.

Pour your tomato and beef mixture over the rice and garnish with a few green onions (optional) and serve. This is sure to be one of the family favorites too!
